| Beer Pancakes
1 3/4 cups of whole wheat flour 1 1/2 teaspoons of baking powder 1/2 teaspoon of baking soda 1 egg 3 tablespoons of vegetable oil 1 tablespoon of honey 1 can of bottle (12 ounces) of beer
In a large bowl, combine the flour, baking powder and baking soda, and mix well. In another bowl, whisk together the egg, oil an honey with a fork. Add the liquid mixture and the beer to the dry ingredients, stir just until a smooth batter is formed. The batter will be somewhat lumpy and slightly thick. Lightly oil a medium skillet and place it over medium heat until hot. Pour 1/2 cup of the batter at a time onto the skillet. Cook the pancakes until the bottoms are golden brown and the tops begin to bubble. Flip them over, and cook until the undersides are golden brown. Serve with maple syrup. Makes 2 or 3 servings |
