| Breakfast Honey Muffins
1 cup of sifted all purpose flour 2 teaspoons of baking powder 1/2 teaspoon of salt 1/2 cup of unsifted whole wheat flour 1/2 cup of milk 1 egg, well beaten 1/2 cup of honey 1/2 cup of coarsely chopped, cooked prunes 1 teaspoon of grated orange peel 1/4 cup of salad oil or melted shortening

Preheat oven to 400ºF. and lightly grease nine 2 1/2 inch muffin pan cups. In a large bowl, sift the all-purpose flour with the baking powder and salt. Stir in the whole wheat flour. Combine the milk and rest of ingredients in medium bowl. Add all at once, to flour mixture, stirring only until the mixture is moistened. Spoon into cups, bake 20 - 25 minutes or until nicely browned. Serve warm. Makes 9
