| Cinnamon Raisin Batter Bread
1 package of active dry yeast 1 1/2 cups of warm water (105-115º) 2 tablespoons of honey 2 tablespoons of butter 1 teaspoon of salt 3 cups of flour, divided 1 tablespoon of cinnamon 1 cup of raisins

In a large bowl, dissolve the yeast in warm water. Stir in honey. add butter, salt and 2 cups of the flour. Beat with electric mixer on low speed until blended. Beat for 1 minute on high speed. Stir in the remaining flour with a wooden spoon. Cover and let rise in a warm place until doubled in size. Punch down by stirring with a heavy spoon. Add cinnamon and raisins. Spoon batter into a loaf pan. Let rise again until batter reaches the top of the pan, not over. Bake in a preheated 350ºF. oven for 40 minutes or until loaf sounds hollow when lightly tapped. Cool on wire rack. This bread is a wonderful treat for breakfast or in the little ones lunch sack as a peanut butter and jelly sandwich.
