| Fried Egg Taco
1/4 cup of salsa 1/2 small tomato, chopped 1 teaspoon of chopped fresh cilantro or parsley 1 egg 1 teaspoon of vegetable oil 1 corn tortilla
Optional: Black or green olives Grated cheese Green onions, chopped Mild green chilies, canned
In a small saucepan, heat the salsa, tomato and cilantro until warm, but not simmering. fry the egg in a small, lightly oiled skillet on medium high heat until well set on the bottom, about 1 minute, then cover the pan and cook until the egg is completely set. Heat the corn tortilla in a heavy skillet on medium high until just beginning to brown, about 30 seconds. Place warm tortilla on plate. Top with egg and salsa mixture. Sprinkle on your choice of extras, fold and eat. Makes one serving |
