Ham Pancake Pie

2 medium sweet potatoes, peeled and thinly sliced
3 cups of diced cooked ham
3 medium apples, peeled, cored and sliced
1/2 teaspoon of salt
1/4 teaspoon of pepper
3 tablespoons of brown sugar
1/4 teaspoon of curry powder
1/2 cup of apple juice or water
1 cup of pancake mix
1 cup of milk
1/2 teaspoon of dry mustard
2 tablespoons of butter, melted

In a 2 quart greased casserole dish, layer half the potatoes, half the ham and half the apples. Combine the salt, pepper, brown sugar and curry powder, sprinkle half the mixture over layers in dish. Repeat this process with remaining potatoes, ham, apples and brown sugar mixture. Pour apple juice or water over all. Cover dish and bake ay 375ºF. until potatoes are tender, about 40 minutes. Beat together the pancake mix, milk, mustard and butter. Remove casserole from oven when potatoes are done, pour pancake batter over top. Bake 20 minutes more, uncovered or until pancake is puffed and golden. Serves 6
