| Smoked Sea Scallops On Sesame Wilted Baby Lettuce
2 pounds of fresh medium to large sea scallops 12 ounces of baby lettuce or 2 small heads of butter lettuce 1/8 cup of peanut or vegetable oil 1/8 cup of sesame oil 2 limes Salt and pepper to taste 1 cup of wood chips |

Light coals on one side of grill and when coals are white, add wood chips. In a mixing bowl, toss scallops in vegetable oil, salt and pepper. Remove mixture from bowl and place on side of grill opposite coals. Put lid on grill and smoke scallops for 5 to 7 minutes, or until firm. Set scallops aside. In a hot pan on stove, add sesame oil. Wilt salad in hot oil. Put on plates, squeeze lime over salad and add scallops. |
