Wild Game Stock
1 game carcass with any meat attached 2 onions, sliced 2 carrots, sliced 2 - 3 stalks celery, sliced 6 sprigs of parsley 1 sprig thyme 1 bay leaf 8 peppercorns |

Put the carcass of the game bird into a pan with the sliced vegetables, herbs and seasonings. Cover with water and bring slowly to a boil, then skim off any scum that rises to the surface and simmer until well flavored and reduced in quantity. Strain and use or freeze.
