| DIABETIC DATE COOKIES
1 cup of raisins 1/2 cup of chopped dates 1 cup of water 2 eggs 1/2 cup of oleo 3 teaspoon of liquid sweetener or 6 packets of Sweet and Lo to equal 1/2 cup of sugar 1 teaspoon of vanilla 1/4 teaspoon of cinnamon 1 cup of flour 1 teaspoon of baking soda |

Boil raisins, dates and water 3 minutes, stirring constantly. Cool. Beat eggs, oleo, sweetener and vanilla and set aside. Combine dry ingredients and add to mixture alternately with date mixture. Beat well. Chill overnight. Drop by teaspoon onto greased baking sheet pan. Bake at 350ºF. for 10 minutes. Yield: 4 1/2 dozen. 1 cookie equals 1 fruit (exchange). Calories to cookie 39. |
