| Roast Pork (Arrosto di Maiale - Italy)
1 loin of pork (6-7 pounds) 1 teaspoon of salt 1/4 teaspoon of black pepper 1/2 teaspoon of caraway seed 2-3 cloves of garlic, cut into slivers 2 green apples, peeled and sliced 1 orange, peeled and sliced |

Rub loin of pork with mixture of salt, pepper, caraway seed, and rosemary. Make slits in meat and insert slivers of garlic. Dust inside of roasting bag with flour. Place meat in bag; arranges apple and orange slices on top of meat. Close bag with fastener; cut 4-5 slits in top of bag with knife. Place in shallow roasting pan. Bake in slow oven (325ºF.) until done, about 2 1/2 to 3 hours. Slit top of roasting bag carefully; remove roast. Remove garlic from meat. Garnish with fresh orange slices. Serves 8.
