| Roast Long Island Duck
one 4 pound of Long Island duck, prepared for cooking salt 1 whole orange, chopped 1 onion, chopped 1 unpeeled apple, chopped |

Wash duck, salt inside cavity. Combine orange, onion and apple, stuff in duck cavity. Close opening, pin with skewers. Place in baking pan, bake at 325ºF. for 2 hours and 30 minutes. Spoon glaze over duck, bake for 30 minutes longer. 4 - 6 servings Glaze: 1/2 cup of brown sugar 1 tablespoon of cornstarch 1/4 teaspoon of salt one 7 ounce bottle of 7Up
Mix the sugar, cornstarch and salt, stir in 7Up. Cook over low heat until thickened, stirring constantly. 4 - 6 servings |
