| Southern Barbecued Pork Spareribs
3 pounds of pork spareribs salt and pepper to taste fat 3/4 cup of sliced onion 1 teaspoon of dry mustard 1 teaspoon of salt 1/8 teaspoon of pepper 1 cup of water 2 tablespoons of vinegar 2 tablespoons of Worcestershire sauce 1/2 cup of chopped celery 1 clove of garlic, minced 1 cup of ketchup 2 tablespoons of brown sugar 2 tablespoons of lemon juice |

Sprinkle spareribs with salt and pepper; brown in deep, hot fat. Place ribs in baking dish. Cook onion in 2 tablespoons of fat until brown; add remaining ingredients. Bring to a boil; cover and simmer for 20 minutes. Pour sauce over ribs. Bake at 350ºF. for 1 hour 30 minutes, basting frequently. Serves 6.
