| Tomato Barbecued Pork Spareribs
4 pounds of pork spareribs 1 clove of garlic 1 large onion, diced 2 tablespoons of butter 1 cup of canned tomatoes 1 cup of diced celery 1 cup of diced green pepper 1 cup of ketchup 2 tablespoons of brown sugar 3 dashes of Tabasco sauce 1/2 teaspoon of dry mustard 2 cups of beef stock or bouillon salt and pepper to taste |

Rub ribs with cut side of clove of garlic. Place ribs in shallow baking pan; roast, uncovered, for 30 minutes at 350ºF. Brown onion in melted butter; add remaining ingredients and stir well. Cover and simmer over low heat for 1 hour. Pour sauce over ribs; roast for 45 minutes to 1 hour longer, basting frequently. Serves 4.
