 Basic Chitterlings 2

10 pounds of chitterlings
1 cup of vinegar
2 chicken bouillon cubes
2 bay leaves
1/8 teaspoon of cayenne
salt to taste




Buy the already cleaned and frozen chitterlings if possible. If you use fresh ones, clean them by removing all the fat and wash them thoroughly in warm water. Place them in a big pot, cover with water and add the vinegar, bouillon cubes, bay leaves, cayenne and salt. Bring them to a boil and simmer slowly until tender ( 5 to 6 hours). Remove the chitterlings and reserve the liquid.  Serves 6 May then be prepared with one the following recipes: Creole Chitterlings or Chitterlings in Batter
