Wilted Mustard Greens (Hl)

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 bunch mustard greens, washed 2 teaspoons canola oil 1/2 teaspoon shallots, small diced 2 tablespoons white vinegar 2 turns freshly ground pepper
In a medium-size sauté pan, on medium heat or flame, put the oil in the pan, add shallots and sauté quickly for 10 to 15 seconds. Add mustard greens and sauté for 15 seconds. Swirl in the vinegar and season. Serve immediately. Total cooking time is 2 minutes.
