| Cream of Celery Soup
3 cups of celery, sliced with leaves 1 whole onion, peeled 2 cups of boiling water salt to taste 1/4 cup of butter 1/4 cup of unbleached flour 5 cups of milk 2 teaspoons of chopped parsley |

Place celery and onion into saucepan, add water and salt. Cover and simmer until tender, about 5 minutes. Remove whole onion. Melt butter in another saucepan, blend in flour, add milk and stir constantly over heat until sauce thickens. Stir in cooked celery and liquid. Garnish with parsley.
