| Shiitake Mushrooms & Snow Peas
1 cup of fresh shiitake mushrooms 1 tablespoon of sesame oil 1 bunch scallions, cut in 2 inch pieces 3 cloves garlic, minced 1 teaspoon of minced fresh ginger 1 pound of snow peas, washed and trimmed 1/2 cup of fresh chopped parsley 1 tablespoon of toasted sesame seeds 1 can of water chestnuts, drained and sliced |

Soak the mushrooms in warm water to cover for 30 minutes. Drain and remove stems. Cut into small pieces. Heat oil in nonstick skillet. Sauté mushrooms, scallions and garlic in oil until soft. Add ginger and snow peas. Cook, stirring frequently for about 2 minutes. Add parsley, sesame seeds, and water chestnuts and heat through. Serves 4 - 5ºF. |
